Vegetable Rice Soup
Vegetable Rice Soup
(from “Meatless Meals for Working People” by Debra Wasserman & Charles Stahler)
1 cup white rice
6 cups water
1/2 cup parsley, chopped
10-ounce box frozen mixed vegetables
1 medium onion, chopped
Pepper and salt to taste
Cook all the ingredients in a large pot over medium heat until rice is tender (about 30 minutes)
Serves 6-8
